This recipe means it is summer in our house! These pulled pork sandwiches are a fun meal to make for holiday weekends when friends & family come over to celebrate. This recipe can be made a couple of days in advance so pulling together the meal will be quick. Serves 8.

Ingredients:
- 3.5-4 pound pork shoulder roast
- Hamburger buns
- Coleslaw & coleslaw dressing (see homemade recipe below)
- BBQ sauce (see homemade recipe below)
- A side like fries, chips, more coleslaw salad, fresh fruit, potato salad, etc.
Step One: In a slow cooker, cook the pork on high for 5 hours or low for 8 hours.
Step Two: When the pork is done (internal temperature of 200-205 degrees) let it cool for 30 minutes. Remove any fatty tissue & discard it before shredding.
Step Three: Once shredded, toss the pork in the homemade BBQ sauce (use as much or as little sauce as you’d like, this is to taste).
Step Four: Toast your hamburger buns, top with shredded BBQ pork, and coleslaw (if desired).
Enjoy your pulled pork sandwiches!
Homemade Coleslaw Dressing
Ingredients:
- 1/2 cup mayonnaise
- 2 tablespoons sugar
- 1 1/2 tablespoons lemon huice
- 1 tablespoon white vinegar
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
Step One: In a glass jar or bowl add all of the above ingredients and mix well until fully combined. This dressing can be used with a 14-16 oz. bag of coleslaw to make 4-6 servings. The dressing will keep in the fridge for ~ 2 weeks.
Homemade BBQ Sauce
We like to use this on grilled chicken in the summer (with fresh sweet corn on the side of course!), on the pulled pork sandwiches recipe listed above, in place of ketchup if we make homemade turkey sloppy joe’s, or on one of our favorite homemade pizzas, BBQ chicken.
Ingredients:
- 1 cup of ketchup
- 1 cup of brown sugar
- 1/4 cup Worcestershire sauce
- 1/4 cup minced & dried onion
- 3 tablespoons liquid smoke – add more if you like a little more zip in your sauce
Step One: Add all of the ingredients together in a glass bowl – mix well until fully combined.
Step Two: Enjoy – keeps in the fridge for 1+ month.
