Overnight Oats with Berries & Cream

In my grab and go morning schedule as a commuter this overnight oats recipe was a staple. I make four 8 oz. servings with the below ingredients and pop them in the refrigerator on Sunday night so they are ready for the work week. I make the overnight oats as individual servings in low 14 oz. glass bowls from IKEA so I can add a lot of fresh fruit on top and still put the lid on.

Ingredients:

  • 2 cups of oatmeal
  • 2 cups of milk – I like to use Oat milk but use whatever you prefer
  • 1 6 oz. vanilla yogurt
  • 1 plain 5.3 oz. Greek yogurt
  • 1 teaspoon vanilla
  • 1 teaspoon honey
  • Optional: Zest of a lemon, lime, orange, or grapefruit
  • Fresh fruit of your choice – I like a mix of raspberries, blueberries, and blackberries. I also love fresh mango and strawberries.
  • Agave syrup (optional but delicious)

Step One: In a low glass bowl add 1/2 cup of oatmeal and 1/2 cup of milk. Do this for all 4 servings.

Step Two: In a medium bowl add the vanilla yogurt and Greek yogurt, vanilla, honey and citrus zest and mix well to combine.

Step Three: Add a large dollop of the yogurt mixture to each bowl.

Step Four: Pop in the fridge overnight or for at least 8 hours.

Step Five: Top with berries and agave (optional) the next day right before serving.

Enjoy!
