Gourmet Cheesecake Q&A

Q: Why are your cheesecakes so expensive?

A: I previously operated this business in Edmonds for several years (2012-2017). Since then my ingredient costs have doubled and I am required to make my products in a commercial kitchen since they are perishable. There are a lot of costs to calculate into operating our business such as ingredients, packaging, commercial kitchen rental space, liability insurance, website hosting, etc. Many of our ingredients are made from scratch and from quality ingredients which cost more than their highly processed counterparts. If you were to purchase a slice of cheesecake at a local restaurant you would be charged $10-$17 per slice. By ordering a 10″ cheesecake you get 12-16 servings for a fraction of the cost.

Q: Why are there only three flavors to choose from each week?

A: Normally I am working a full time job for NOAA in Seattle (I am currently furloughed due to the government shutdown) so I would be baking after a 12 hour work day. I need to keep the business model sustainable while working full time. If there is a flavor you are desperate to try let me know! I can work on incorporating it into the bake schedule.

Q: I can’t pick up in person and I won’t be home for a delivery, what should I do?

A: Leave a cooler with ice packs in it on your front porch & leave us an order note so we know you won’t be home for your delivery.

Q: Can you make my cheesecake gluten free?

A: Absolutely! For most of our flavors this is a simple swap of graham crackers. When you place your order just leave me an order note or email me at [email protected]

Q: Can you make a dairy free or substitute other ingredients?

A: I am unable to do this currently – but it may come in the future if I have the time & ability to grow the business. Right now I need to be as time efficient as possible to fulfill our orders.

Q: Is there anywhere on the Island I can just buy a slice?

A: At the moment unfortunately not. I gave free cheesecake samplers to 8 local restaurants with the goal of establishing wholesale partnerships but none have ordered, hopefully that will change in the near future! If you have a favorite restaurant you’d love to see our cheesecake at talk to the owner or manager and encourage them to place an order or have them get in touch with me. We believe in collaboration & community connection.

Q: I can’t eat a whole cheesecake in a week, what can I do with the leftovers?

A: Freeze it! Our cheesecakes freeze beautifully for up to three months. I like to wrap each slice individually and then just pop it in the refrigerator to thaw.

Q: Will you ever offer a sampler of your flavors?

A: Possibly – samplers are a ton of work since they require many different flavors, slicing, reassembly & then packaging. I am experimenting with 4″ cheesecakes to see if they meet my standards to do samplers in the future.
