French Onion Soup

This is my daughter’s favorite French onion soup and it is a recipe we make often, primarily in the colder months. There is something so comforting about a hot bowl of soup after a long day and I hope you’ll come to love this recipe as much as we do. Serves 6.

Ingredients:

  • 1 tablespoon olive oil
  • 2 large red onions, thinly sliced 
  • 3-4 sprigs of fresh thyme
  • Salt and pepper
  • 1/2 cup dry red cooking wine
  • 4 cups of beef broth
  • 2 teaspoons soy sauce
  • 1 French baguette
  • 1 1/2 cup shredded Gruyere cheese
  • 6 slices of Swiss cheese 

Step One: In a large pot heat olive oil on medium high heat. Stir in onions, thyme, and 1/4 teaspoon salt. Cook 15-20 minutes or until the onions are golden brown and very tender, stir occasionally. 

Step Two: Add dry cooking wine and simmer 2-5 minutes or until reduced by half. Add the beef broth and soy sauce. Heat to boiling and then reduce heat and let simmer for at least 20 minutes. 

Step Three: While the soup is simmering cut 1″ rounds from your baguette, you’ll need 3 small bread rounds per bowl. I like to pop these in the toaster oven so they are super crunchy. Preheat your broiler to high. 

Step Four: Divide the soup among the bowls (make sure they are oven safe), put 1/4 cup of shredded gruyere in each bowl, place in the 3 small bread rounds in each bowl, top with one slice of Swiss cheese. 

Step Five: Broil 2-4 minutes or until golden brown. Serve hot.
