Baked Berry Donuts

These baked berry donuts will be a new healthy household favorite! Every Saturday and Sunday morning my family and I sit down for a nice breakfast together. I am always looking to create new recipes we will all enjoy. What I like about this recipe is that you can use whatever berry you’d like to mix into the batter. This recipe makes 6 donuts – make sure you have a donut pan before you start!

Ingredients:

  • 3 ounces milk (1/4 cup + 2 tablespoons)
  • 1 teaspoon vanilla
  • 2 tablespoons maple syrup (agave or honey works too)
  • 2 tablespoons canola or vegetable oil
  • 1 egg
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom (optional)
  • 1/4 teaspoon salt
  • 1/2 cup fruit of your choice – berries work best like blackberries, blueberries, strawberries, raspberries, etc.

Step One: Preheat your oven to 350 degrees.

Step Two: In a large glass bowl add the flour, baking powder, cinnamon, cardamom and salt. Mix the dry ingredients.

Step Three: Add the milk, vanilla, maple syrup, oil and egg to the dry ingredients bowl. Mix well to fully combine the wet and dry ingredients.

Step Four: Fold in the fruit of your choice to the batter.

Step Five: Spray your donut pan and add batter to each donut well.

Step Six: Bake for 18-20 minutes, they will be a nice golden brown. Let cool for 5 minutes.

Note: You can serve the baked berry donuts plain or make a simple vanilla glaze to drizzle over the top or to dip the donuts in. You can also add a little texture and extra flavor by adding unsweetened shredded coconut after glazing (as shown above at the top of the post).

Simple Vanilla Glaze

  • 1 tablespoon of butter, melted
  • 1/2 cup powdered sugar
  • 1 tablespoon plus 1 teaspoon half and half (you can use milk as a substitute)
  • 1/2 teaspoon vanilla

While your donuts are cooling make the vanilla glaze. Melt the butter in a bowl and add the powdered sugar and the half and half (or milk), & vanilla. Mix well until fully combined.
