These banana bite pancakes are a delicious and healthy breakfast option! Made with just two ingredients they are a quick option for busy mornings or to make for a big group. This recipe makes 4 servings.

Ingredients:
- Pancake mix – I use Krusteaz Light & Fluffy Buttermilk Pancake mix
- 3 large fresh bananas
- Fresh fruit of your choice
- Maple, agave or honey to drizzle on top
- Homemade whipped cream – optional
Step One: Turn on your oven to warm and line a pan with parchment paper. Set aside.
Step Two: Make the pancake mix according to package directions. I use 1 cup pancake mix to 1 cup water. Set aside.
Step Three: Warm your electric griddle to 375 degrees or a non-stick pan on the stovetop to medium heat.
Step Four: Slice one banana at a time into rounds and place 10 banana slices into the pancake mix. Stir the banana slices around in the pancake mix with a soft spatula so they are evenly covered.
Step Five: Using your hands or a slotted spoon put the bananas one at a time onto the electric griddle or non-stick pan. It will look like this…

Step Six: You will see small holes forming around the sides of the banana slices. This is when they are ready to be flipped. See the photo above. Flip the banana slices to cook the other side.

Step Seven: When both sides are cooked, remove the banana pancakes with a large spatula. Place them on the pan with the parchment paper in the warm oven.
Step Eight: Repeat the steps above for all of the banana slices.
Step Nine: In a bowl add as many banana bite pancakes as you would like. Top with fresh fruit – I like blueberries, blackberries & raspberries. Then add homemade whipped cream & maple syrup. Serve immediately.
